Vegan Strawberry Shortcake

  • One recipe for basic Baking Powder Biscuits (Just use almond milk for the milk and a vegan margarine like Earth Balance for the shortening.)
  • Some fresh or frozen strawberries, simmered with a little lemon juice and sugar.
  • A little full-fat coconut milk, whipped just like cream with an electric mixer.
 edit: My original post called for TruWhip, something I ate all through my vegetarian-but-not-yet-vegan days. But as commenter Autumn Allusions points out, I am a DUMBASS (she didn't say that part). TruWhip, while all natural, contains milk casein! I don't know what made it stick in my mind as vegan, but luckily, I've just as often whipped coconut cream for this recipe, and it works just as well and it's easy to keep cans of it hiding in the back of the cupboard.
